Before becoming an RDN, Nancy Miller had a variety of careers - from teaching English as a second language to bookkeeping. She grew up in Georgia, but has lived in the Pacific Northwest for many years.
Because of her interest in whole food nutrition and food allergies, she decided to pursue her MS in Nutrition at Bastyr University. She completed her distance dietetic internship at University of Northern Colorado. Upon finishing her internship, she worked at a long-term care/rehab facility for four years. She continues to have a passion for the elderly and their care.
Ms Miller, like Ms Fox, has also seen how disconnected nutrition education can be from the growing and cooking of food. She is an avid cook, using her background with food allergies to create delicious food, often using substitutions or alternative ingredients. She enjoys sharing that knowledge (and yummy recipes) with others. She and her husband are often preserving something - whether it's apples from a friend or rending lard from the pastured hog they purchased. Additionally, she helps her husband whenever they have honeybees. And, often she will have some herbal remedy "brewing" for some use or another.
Ms Miller joined Garden to Table Nutrition DI when it was in the final stages of candidacy approval in 2017. While she wears many hats, she mainly takes care of the paperwork for rotation sites, meets 1:1 with interns, and collaborates with Ms. Fox.
