Susie Fox  MS RDN
Founder of Garden To Table Nutrition

After graduating from Stanford University, Susie Fox worked in outdoor-education and as a classroom science teacher. She obtained the gold standard National Board Certification in Early Adolescent Sciences in 2000. While working in the schools, she wanted to find better ways to feed kids so she enrolled in Bastyr University's Master's in Nutrition Program.

After graduating from Bastyr, she personally experienced how a shortage of internships impacted students. While still an intern in a distance internship program with Oakwood University in 2010, she was determined to "do something to fix the problem." She has also seen how disconnected nutrition education can be from the growing and cooking of food, and knew that creating experiential learning opportunities for interns would created leaders in nutrition who could then use those skills to teach others.

Susie has, since, been acting as a preceptor for interns in dietetic programs since she became an RD, and has helped to grow the volunteer and WWOOF programs at Songaia. This has included nutrition students, sustainable systems students, education students, and Willing Workers on Organic Farms.

Read more about her journey to start the Garden To Table Nutrition Internship in the July 2019 issue of Today's Dietitian.

Note to Educators & Preceptors

Thank you for all you do as preceptors, internship directors, professors. I'd love to hear from you, how we can best support our preceptors and produce high quality graduates who are successful in their education and in passing their credentialing  exam, and in go on to improve health in their communities.

One commitment that Garden To Table Nutrition is to support all of our preceptors in their continuing education and building community among dietitians. Garden to Table Nutrition will pay the dues (Up to $80) for their preceptors for their local dietetic association, or DPG, in order to assist them in keeping current. Alternatively, Garden To Table Nutrition will provide, at no charge, a mix of pre-recorded lectures presented at North Sound Dietetic Association (NSDA) and some cultural presentations from recent GTTN interns, for a total of nine free CPEs. It is the scarcity of preceptors that makes it hard to create enough internships for all students. Please let me know what we can do to best support you as you preceptor. You can reach me via the contact tab.
